    Hot break

    I brewed a 5 gallon batch in my keggle so there was a lot of head room. Normally, I would try to control the hot break by lowering the flame. In this case I decided to ride it out with stirring, thinking that it would take about the same amount of time to subside - about a minute or two. Turns...

    Agree with this. Sulfate to chloride ratio should be reversed.

    NB's Irish Red tweak

    I recently purchased the Midwest Supplies Irish Red. I think it will be a little light for my tastes, ending up at 4.5% ABV. I'm thinking about adding a pound of DME to the recipe, but don't know what type to add. Light, dark or something in between?

    If you raise the temp after cold crashing, does the sediment come back into suspension?
