    Took a sample after a week in the primary. It was down to 1.010 and I did not like the taste of the sample, it tasted like my weisenbier that didn't turn out all that good. Hopefully 2 more weeks will clean it up.

    Hey hey, more STL folks! Update on my apfelwein, I'm nearly 4 months since start and its holding steady at 8.5%. I think I am going to let it sit until the 6 month mark then bottle.

    I read this entire thread a while back and I don't recall if it's recommended to keep the Apfelwein in the carboy the entire time (3-8months) or to rack into secondary to age or bottles once fermentation has completed.

    ok I didn't wait lol. Took a FG of 1.011 (recommended 1.011-1.015) smelled fine, tasted the sample and it was ok so I decided to bottle. Here are some pics......let me know what you think. first opened the primary Hydro reading looks pretty clear for a weizen racking to bottling bucket...

    Thanks for the reassuring! I plan on taking a FG reading tomorrow to see if its close to the recommended FG, then let it sit an extra week to be safe. Had to buy some beer last night to "hold me over" while waiting. Schlafly Hefeweizen........pretty tasty from a local brewery. Drank it thinking...
