    Once rice cap sinks I strain and press the liquid out of the rice then I put in bottles with fermentation locks aka bubblers so I can observe activity and taste and avoid pressure problems. Still new to rice wine but like the taste.

    Anybody use amylase enzyme?

    I read somewhere that when using amylase enzyme some wheat dme addition as a syrup was advisable as its often what they culture the amylase in. I'm going to give it a try.
