    Can't use my hydrometer... Uh-oh....

you really take hydro readings every day... even during active fermentation? Or are those simply estimates based on the OG and FG and the time span in between? I'd be a little freaked to take that many readings :)

    Bubbling?

I am a new brewer myself (currently fermenting my third batch) and was very anxious to get my first batch in my belly. Because of the great community on this site, I have already learned that longer is better. Keep that beer in primary for at least two weeks and you can not go wrong. Cheers

My Nut Brown Ale is overcarbonated

sounds like an infection... happened to the first batch I made with my friend earlier this year. Do you happen to see a ring at the top of the fluid levels inside your bottles by chance? that's a tell-tale sign of infection if it's already been bottled.

    Removing blowoff

Very generally speaking... when is it safe to remove the blowoff tube and replace with an airlock? Just after the kraussen settles?

    Whoops - too much (wort)

It fermented like devil's water... was incredible. Thank goodness I used a blowoff tube for the first time. 6.5gal carboy and the kraussen almost touched the mouth of the glass! SWMBO didn't care for the off-smell in the house the last two days :)

    5gal carboy (for a primary?)

Anyone do a primary fermentation in a 5gal carboy? Obviously a blowoff tube will be used, but I'm just wondering if people do it. thanks!

    Flask - stove top

Well... just as an update: Brew day was on Saturday... nice hour long boil, quick chill (about 15 minutes), got wort in carboy... shook it up really good, shook my e-flask starter which started fizzing. Pitched the yeast not knowing if it was actually going to do anything and WOAH! In about 8...

    Whoops - too much (wort)

Hi gang... Just finished cleaning up from brew day no. 3. Made a William's Brewing Honey Wheat kit. Unfortunately the most details come from the web site kit description and theres only codes on the ingredients when you get the kit instead of hop type, etc. Ok.. so before I ask my...

    Another Starter question

I keep seeing info on people using the stirplates... what exactly does the stirplate do for the starter? Is it to keep the yeast in suspension? My starter is sitting on day 3 and it's clear with a nice layer of yeast on the bottom ready for brew day tomorrow. When i gently move the flask, it...

Ok.. I'm starting to feel much better when it comes to pitching this yeast on saturday... thank you again everyone!

    Flask - stove top

I forgot to mention... there is absolutely no evidence of a kraussen ring on the flask above the surface of the wort... is that normal? should there be signs of something?

Dry Hopping with Pellets in a Keg

I just bottled my IPA which was dry-hopped in secondary with pellets.. no bags.. not anything else. After two weeks the pellet 'dust' settled nicely on the bottom... I moved the carboy to the counter where I would be bottling a few hours before I started to let it re-settle and I was just fine...

    Flask - stove top

That's great to hear that people just use foil.. makes me feel a LOT better. Ok.. so here's the update... about 13 hours after my freak-out above :) Went downstairs before leaving the house and checked the flask. Foil was still on tight and the wort was crystal clear... nothing on the surface...
