    Mango Pulp Wine

All of my pictures go whichever orientation they want. Completely normal everywhere else! I wonder how I can fix it.

I've pitched the yeast! Is it okay if the water in my airlock looks like this?

    Mango Pulp Wine

Someone please help! The Red Star "Champaigne" packet I have states it is good for 5 gallons. This recipe is for 1 gallon and says to use 1 packet. Should I use 2 packets for 2 gallons of wine?

    Mango Pulp Wine

I am late to the game, but I plan to make this recipe this week. One question... is the mango pulp measured by weight or volume? Edit: Mangoes were on sale 4/$1 so I will be making the pulp myself. I will be using two 1 gallon carboys for this batch. Edit #2: I reviewed the OP's mango pulp...

Does my Scoby look 'normal' - pics!

Yes, Organic English Breakfast tea should be just fine. I would like to try oolong myself some day. We have been using this brand since we started and it has been great.

Does my Scoby look 'normal' - pics!

This looks like a healthy SCOBY to me. What kind of tea did you use, just curious?

    Very Beginner Kombucha Question

Yes, the bottles will need capped for secondary fermentation. The fruit and sugar added during secondary fermentation will give the live yeast and bacteria plenty of food to consume after initial fermentation. This should give you the fizzy carbonation that great kombucha is known for. Adding...

    Very Beginner Kombucha Question

I think that what you are seeing looks about right after around 6 days. Temperatures around 70º-75ºF is about average for us as well. The first batch we made, we let sit undisturbed for 2 weeks. Our last batch we let sit for about 3 weeks and I think the pH was about 3.2 or 3.4 before we...

    Very Beginner Kombucha Question

The SCOBY (Symbiotic Colony Of Bacteria and Yeast) will form on the top of the tea, creating a natural seal so that the gas cannot escape. The mother SCOBY can be submerged, that is no problem. A few things to consider, make sure you are keeping your vessel in a dark place free of any likely...

Should I be worried about a plastic spigot?

Thank you for your input. I noticed a very small drip right underneath my spigot after my kombucha had been fermenting around 3 weeks. After further investigating it, we found out that it did leak a little on to the carpet; a dark and syrupy liquid... just a few drops, over a period of 3 weeks...

is oxidation a concern when bottling?

For bottling, we use 1/2 teaspoon of sucanat per 16oz bottle. I believe this helps in building carbonation during secondary fermentation.

Bottling: What types of jars are acceptable

Thank you for the reply. We will certainly be using other bottles this batch then. We are planning on bottling Sunday so it may be a few days before any other updates. Our kombucha is smelling very good so far. This will be a week longer than our usual fermentation of two weeks. Here's hoping...

Should I be worried about a plastic spigot?

My glass 'beehive' jars have plastic spigots and I have read they are safer than most metal spigots. My guess is that as long as you sterilize the jar before each brew, you should be just fine. I used natural dish soap and very hot water to clean my vessels and I opened the spigot to let the...

Bottling: What types of jars are acceptable

Are any type of glass containers acceptable when bottling kombucha? Only having used GT's bottles, I would like to reuse other bottles if possible. We were discussing if Kevita bottles would work. This is our third batch of kombucha, and we would love to hear any tips before we start bottling...

I found this website by going to Google and typing 'kombucha forum'. Now I am perusing much more than brewing kombucha. Thanks for a great community.
