    Original bottle, still good?

    Rack it and taste it.

    Copy and paste?

    Lift off!

That would be correct and the fruit gets fermented.

Will I be able to recover my high-acidity cider?

Apples have malic acid in nature, but sweet table apples don't have a lot of it. If it's turned to vinegar you would know it by the smell, and there would be a bacteria film (mother of vinegar) that would be obvious. Severely oxidized cider can have sour and vinegary notes so that's my guess for...

    Lift off!

A mead with apple juice is a cyser. A mead with grape juice is a pyment. A mead with any other fruit juice is a melomel. These titles assume that the fruit juice is fermented with the honey. If the fruit is not fermented, then it's just a flavored mead with no other name.

    Apple Mead is a Cyser.

    Pears and SG

I haven't had a pear in years, so I don't remember. But a friend of mine wouldn't eat one unless he was home close to a crapper.

Be aware that it also has a laxative effect... ;)

    Pears and SG

It's quite possible, yes. I believe it's because of the sorbitol sugar in pears.

Help with first mead with EC 1118

Yes, that's a lot. It should ferment very quickly. Don't know what it'll taste like when it's done.

    Truvia

"Sweeten to taste", my friend. Try about 1/2 tsp. per bottle and see how it tastes.

    Am i in trouble?

Tart is perfectly normal for unsweetened cider.

Wine bottles and corks for hard Cider?

If your cider is not carbonated, corked wine bottles are fine. And as Chalky said there's no reason you can't store flip tops on their side.

    Auto fermentation in refrigerator

I've had apple juice do that, but not mead. Where did you get the honey from?

Planning on buying honey in bulk...

Again, I will caution you about buying a 60 lb. pail, unless you're certain that it's the best honey you've ever tasted. I wouldn't want to hear you say, "This honey sucks, but I have a lot of it soo...". What would you do with 40 lbs. of honey that's crystalized because you haven't used it soon...

Planning on buying honey in bulk...

60 lbs. is a metric crap-ton of honey. Those bulk pails are likely to be local wildflower, which is fine for some meads but really limits your ability to create a wide range of mead styles. So unless you only make melomels where the honey isn't the main player, I would suggest a different route...

    bottle carbonation

Funny that - I haven't broken one either since I have two LOL. My only complaint besides being delicate is that they require a rather large sample. Gotta use my biggest vial. And DON'T use them as a stirrer
