    If you sanitize everything I doubt its ruined, when I have tasted my cider real young its allways tart with a sharp edge almost acidic like you said you would be amazed at what even a few more weeks will do to the taste.

    Taste could be cause its only three weeks old, give it a little time probably allright. Any fermented beverage will taste off when its still young.

    Looks great the only thing you made need is some pectic enzyme since you boiled the fruit even for a few seconds it could still be a pain to get it to clear. I wouldnt worry about campden at least till you rack it. Wild yeast have a hard time dealing with honey and any that could the lavlin...

    Yes the Safale S-04 will make krausen. I used a six gallon carboy and filled it with five gallons of cider pitched yeast and the krausen crept up to the airlock, I didnt need a blow off but came darn close.
