    Banana Wine

Would worry more about the vegetabloe oils they coat raisins with so they wouldn't stick. My 5 liter batch went rancid due to the raisins last year. And oils you cannot wash off with water. I would just go with crushed grapes or grape juice, depending which one you have access to.

    Jack's Apricot Vanilla Mead

Mine recently stopped from 1.1000 sg at 1.042. Doesn't look good, so I racked it, topped with some water as I was afraid to top with more honey-water, added yeast nutrients and yeast after 3 days as fermentation did not restart. Any ideas or tips on what I am doing is right?

    Coffee Wine

A small update on this. The wine got a bit cloudy over the past couple weeks. We opened one up for tasting, and light carbonation occurred. We got a beautiful sparkling wine. I have to mention that the coffee used was not washed but a light-roast that was made with a fermentation technique...

Easy Stove-Top Pasteurizing - With Pics

Sous vide is for vacuum cooking, not for this kind of use. Try a good old pot next time. No need to stabilize the temperature, you start high so that the water doesn't cool below the pasteurization temperatures while the yeast dies of heat exposure. You were essentially cooking your brew instead...

    Ginger Mead

Nice, I think I will get one going as well next month, when my other meads are coming out from the 10 litre jars.

    Banana Wine

I have a question regarding leaving the skin on the fruit when boiling and preparing the pulp. This doesn't look like a good idea to me due to the pesticide and fungicide used while transporting bananas from the fields, just like with oranges and other citrus. It might be worth mentioning in...

    Jack's Apricot Vanilla Mead

Don't take my word for it, as I am a newby myself. However, I go mostly by the hightest faq, and I would clarify before bottling: http://home.comcast.net/~mzapx1/FAQ/SparkFine.pdf I just made 2 batches with this recipe in 10 litre demijohns. Lime honey OG was 1.1 Rape honey OG was 1.084...

    Coffee Wine

Just corked mine. Used 1:16 ratio with coffee and filtered water. I pre-tasted several different coffees to get the one that was best as a cold brew. Coffee was in the water 11 hours, when it was filtered and topped with filtered water to leave little headspace in the 5 litre demijohn. Added...

Easy Stove-Top Pasteurizing - With Pics

I have a really quick question regarding carbonation. Let's assume that I would like to carbonate my wine/cider, however, I have already clarified it with bentonite and isinglass. What are the chances of yeast still being alive after 2 rackings (1 off bentonite, 1 off isinglass)? The...

    Jack's Apricot Vanilla Mead

In 6 months after bottling. Age it, it is really alcoholic at the beginning.

    Jack's Apricot Vanilla Mead

I tried a bottle two weeks ago, I think, and the alcohol level was way too overpowering. The mead is dry, as if all the sugar broke down completely. I might try another one in a couple weeks, but I don't know if the alcohol levels will lower over time while the mead is bottled. What are your...

    Very Beginner Kombucha Question

I have a question too. How much sugar do you use for primary? I am working in a 4 litre pickle jar or cold-brew black tea. I am making a new batch right now, going with some vanilla extract once the primary is over. Will do fruits and bottling for the secondary, usually we just drink it in a...

    Jack's Apricot Vanilla Mead

I did my first racking last weekend. Mine turned out dry with much body. It is extremely tasty, too. Fermentation seems to have stopped though, not much coming through the airlock. It has also cleared up real nice. I've made sure to save the yeast from the bottom of the demijohn, as I've found a...

    Jack's Apricot Vanilla Mead

Thank you singin, I'll wait with the racking until the carbonation comes to a stop. Am I to expect much lees from mead?

    Jack's Apricot Vanilla Mead

Just a quick question. Mine has been in primary for about 3 weeks now, and I'm not sure if it has gone flat or not. There is a "blup" every 8-10 seconds or so, but the mead never really foamed above 2 cm when it was working the most. The colour is beautiful deep yellow, and there is just a...
