    I always just used tapwater with no infections. Knowing what I know now I should have at least filtered it to get the chlorine out.

    Hi Lucky, It sounds like you're talking about the potential alcohol scale on your hydrometer. My understanding is that it measures alcohol based on fermenting out ALL sugars in the solution, so its kind of useless with beer. Most homebrewers mainly pay attention to the Specific Gravity...

    Nice! Congrats! I haven't had straight up Ruby in a while. I usually go with the Rubinator. Its Ruby with Terminator Stout. Ooooh so good. :mug:

    what do you use to shield the wind?

    I use aluminum flashing too, hasn't melted yet. I made it more to direct heat up and around the kettle as opposed to outside my garage (it was taking forever to boil before I added this)

    Don't worry, you'll still have drinkable beer. :D I'd see how this one turns out and then focus more on temp control next time. I didn't attempt controlling my fermentation temperatures my first 6 months brewing and ended up with good tasting beers. Thats not to say that some didn't have off...
