I use my 6.5 gallon glass carboy for fermentation. I've been keeping my brews in there between 3 to 4 weeks before bottling. I've only done three batches but they have been turning out really well and I've been getting really clear beer too.

Congrats, I know how ya feel. My first brew was decent. My second brew, a porter, has been bottled for 3 weeks and I just tried one last night. I freakin loved it. I can't wait for a couple of more weeks for my amber that I bottled last week. Way to go man.

Thanks Irregular, I wasn't sure if going over 3 weeks would have an adverse effect. After this batch I think I will take your advice and go four everytime with how it worked out.

Gremlyn, I've been going 3 weeks in the fermenter. Jppost, I was actually surprised as it tasted good. I can't wait to see how it tastes in a few weeks.

Which book ya reading? I highly suggest How to Brew by John Palmer and welcome to a new addiction. I started off with a starter kit that my local brew show was selling and a basic recipe. I had a couple of friends who walked me through the steps of brewing and I also took a class at the brew shop.
