    Racking

    I've noticed if I wait too long to rack my wine it develops a "yeasty" taste. If the activity has slowed down, then I would say rack it. Then throw in some crushed campden tablets and let it age a couple of months.

    Low alcohol tolerance yeast

    You could always just brew weaker (as in lower abv) drinks with high tolerence yeasts. I live a couple hours away from my LHBS so I will often grab a half dozen packets of champagne yeast for my wines.
