I literally just realized today that I don't need a larger kettle (currently 7 gal) to do all-grain BIAB, I just need to scale down my recipes to 3 gal! Then I found this article in my inbox and knew it was meant to be! Thanks for the insight!

This isn't good to read. I've been aging some homebrew in Sierra Nevada bottles. Guess I have an excuse to open them early now. Boo…hope I don't have to dump the whole six pack.

I'm on my second 5 gal extract batch and I found that waiting an additional week after bottling, so 3 weeks, made the beer taste better. Not sure why. Maybe the yeast did some additional cleaning inside the bottle. That doesn't help with the head question, but the list of things to watch for...

I knew it was a big beer and that's all I have for an airlock. Didn't have much headspace either so I added the tube as a backup. Glad I did. I do need to get a 3-piece so I don't have to Frankenstein it so much.
