Imperial A09 Pub - don't oxygenate for maximum diacetyl

For giggles, in lieu of a proper fast ferment test, I pitched some wort with a massive pitch of A09 - but unlike the main batch, did zero oxygenation. Butter-scotch Mountain. It also finished several points above the main batch. The main batch, not bad. Just English character. I'd heard that...

    YVH 2019

Their Cascade seems pretty darn good but DAMN, their Chinook 2019 is amazing grapefruit and pine . . . can't wait to brew with it. Anyone else?

    WLP090 being a little B

And no, not Belgian. I do a starter with WLP090 in exactly the same way I do my 2278 prop-up. The 090 refuses to drop clear. The 2278 drops bright. Perhaps it's the whirlpool hopping and the loose dry hops, but I hold the keg at 4C and the stuff JUST DOES NOT DROP. I prop to a good pitch rate...

    Cider with Brett C

After having Double Mountain’s Secret Crush cider, I wanted to try making a dry cider with Brett. I chose Brett C mostly because the profile should be the least funky. Thanks to a nearly expired vial, I underpitched - should get good flavour expression. And of course I bought a new shiny...

Anyone tried a wine fermenter like this? (image enclosed)

Italian-made wine fermenters. Basically just a brew bucket. I like it because it will fit in my fridge and has a clamp lid, so I can pressure transfer. Anyone have experience with em?

What’s your favorite Amarillo-heavy IPA recipe?

I’ve got a lot of Amarillo and only a few months until they start harvesting again!

    Are Cryo/LupuLN2 hops not just a T20?

T90 pellets are 10% of the bract removed. T45 pellets are 55% of the bract removed. Are Cryo hops anything other than a pellet with further reduction of bract content? As contrasted with hop hash, which would be the lupulin gland fraction that falls out during milling.

Has anyone copitched 001 and 007?

I know WL sells a mixed pitch of 001 and 002 but I like 007 better than 002. And the 007 still drops nicely. I was thinking of simultaneous copitching 001 and 007, thinking that the 007 will help pull the 001 down. Perhaps you will say, why not try 090? It's a little too clean for me and I want...

Treatment of alkalinity with phosphoric then boiling - cloudy?

I have very hard water, 130ppm Ca 320ppm bicarbonate. I use 75% phosphoric to neutralize alkalinity buffering and my mash pH consistently falls approximately where I expect it to. My process is: fill kettle, add acid and stir, then pre-boil (to reduce dissolved O2). After the boiling, the...

    Mistral hop

Continuing my hop voyages I did a moderate IPA ( same as before) but with Mistral instead. 15 minute, whirlpool and dry hop. Rose and Lychee. Up the wazoo. Wtf. We'll see how it ages (currently lagering) but I'm not sure I can drink this one!

Apple Cider on Lager Yeast Cake?

I am contemplating making good use of a healthy WLP830 (34/70 Weihenstephan) cake by dumping a bunch of apple juice on it. Anyone tried this?

    Mandarina Bavaria dry hop

White Labs strains with Diastaticus built-in

So if you goggle "site:whitelabs.com STA1" you get the current list, sort of: WLP... 565 566 885 570 038 590 644 740 568 099 545 037 045 707 670 351 So all these strains sold by WL are S. Cerevisiae var Diastaticus, which means they produce Glucoamylase and can break down and ferment dextrins...

Hallertauer Amarillo, Styrian Wolf, Mistral - anyone brewed with em?

I just ordered 500g of each of the above and am excited to try them. Has anyone used Hallertauer Amarillo, Styrian Wolf, or Mistral? If so, tell us about the results!

    Fermentability limit and mash duration

I brewed: 95% WEY Barke Pils, 5% WEY CaraHell; mashed in approx 63C and let my system raise the temp to about 65-66C over time. Last time I brewed this, I mashed for 60 minutes and my FFT came in at 1.010. This time I brewed it, I (had to deal with a baby so I had to walk away and) mashed for 2...

Are there any active good blogs left?

All of my historical favourite homebrew blogs seem to have withered on the vine (verticillium?). Any suggestions for active beer blogs?

Grain comparison: Weyermann Pilsner and Pale Ale and Viking Pale Ale

I wanted to compare this cheap Viking malt (possibly Polish) with my usual Weyermann. I did a mini mash at my normal water to grist ratio with my normal water treatment, in three little thermoflasks. Sadly my mash temp came in way low, but this is a relative test and that was the same for all...

    Pic Request: BIAB recirc/vorlauf

To those of you who recirc into/through your grain sack/canister, would you please post some pics of what your wort looks like going into the boil? And describe your setup. I am wondering if it's worth it to get a pump. Thanks!

Best draft line for 3/8" John Guest fittings?

I want to buy line for 3/8" JG fittings for my 3-tap kegerator. I want to be able to coil the lines. I clean my lines by running hot caustic, then hot water, then sanitizer. What is the best product I can buy in bulk? And where should I get it in the USA? Thanks!
