    well I couldn't wait till wednesday and harvested tonight added a blackberry syrup to and it still tasted like a white wine but after 4 glasses I am a bit pickled lol my wife doesn't like wine but she knocked back 2 glasses to see what the effects where.

    I have so far only layered one batch the second with the first I mixed the yeast through the rice by hand and the threw it in a jar the third I did the same but rolled it into baseball sizes and stacked in a 1g jar.

    So my last batch I made balls then added to the jar and it's fermenting better than the last to batches hopefully it turns out great!

    Ok so I'm starting my 3rd batch today I cooked 6 cups of nishiki rice with 7 cups of water these are the yeast balls and rice I'm using just letting the rice cool right now I'll get a pic when I've put it in the jar.

    Thanks I'm looking forward to starting another batch tomorrow need to buy another 2 of the square jars and the ingredients gonna do this every week till harvest day so I can have a pipe line just need to find some receptacles for the finished product.     Hi jak are you saying you'd be concerned that they are air tight because of the risk they might break due to CO2 pressure? If thats your thoughts I found that when I washed them and shook them with warm water inside they leaked pretty badly so I figure they'll allow CO2 to escape!
