Making Traditional rice Wine. Cheap, Fun, and Different

I use a rice cooker -- I'm not sure if that's considered steaming or boiling, but before I tried the sticky sweet rice it always cooked my rice to perfection. So I'll keep using that -- it's the same rice cooker I see at some Asian restaurants where they have rice constantly kept warm. It will...

Making Traditional rice Wine. Cheap, Fun, and Different

Putting the rice in the bottle/jar is not the issue. I'm using a pretty wide mouth 4 or 5 liter jar. The issue I had was that the blasted rice wouldn't finish cooking. I ended up with really soggy, gluey rice. I cooked 2 batches, each with less water than I would normally use ... 2nd batch...

Making Traditional rice Wine. Cheap, Fun, and Different

Thanks, MasterCrook! It's not sweet now and I tasted it on Day 15 ... so I'm not sure if that's due to the rice I used or the yeast balls ... or even the amount of yeast balls I used. First batch -- got carried away and I think I used 5 balls total (not 5 packages of 2 balls). Has anyone...

Making Traditional rice Wine. Cheap, Fun, and Different

Nope, all of that is the liquid produced from the rice and the yeast balls. :) Maybe because I used sweet rice and it wasn't "fluffy" but still really sticky when I added it to the jar is why it has that milky appearance. No idea -- this is my first rodeo. So, can anyone give me an idea of how...

None. I looked at the recipes here and I didn't see where anyone was adding water -- soooooooo ... does that mean I goofed up?

Making Traditional rice Wine. Cheap, Fun, and Different

Howdy! Here's a view of my rice wine at 15 days in. And a closer look. I must tell you that I had just stirred it up right before I took those shots. It was a bit clearer prior to the stir -- but not much. That's a 4 liter glass jar, so I really have no idea yet how much...

Making Traditional rice Wine. Cheap, Fun, and Different

OK -- I'm just going to let it ride and see what happens. The worst is that it's undrinkable which means I'd be at the same point if I threw it out. I'm going to spoon off as much of the "black stuff" now as I can -- something about it makes me itch when I look at it (psychosomatic, I'm...

Making Traditional rice Wine. Cheap, Fun, and Different

I tried ... really tried to read through 125 pages of posts, but I admit to having ADD and skipping around. I bought Sweet Rice and soaked it for 2 hours and then added it to my rice steamer. When it went off (auto on/off) I had a gooey mess with about an inch of slimy glue on top that I...

Thanks -- will do that. Appreciate the quick reply!

    Mold on Outside of Keg

OK, this is new and kinda freaky. I have a small commercial soda fridge (like you see in a convenience store) and I adapted it to holds 4 kegs. Fridge was free, so it works for me! I just took out all 4 kegs. Three were fine (2 were kicked and I'm filling with more yummy goodness) but I...

    Hello from PA!

Welcome, Irish! :) Happy to see another brewer in PA. If you are near the Lehigh Valley I'd love to know the orchard you are talking about -- unless it's just their private orchard & press.

    Graff (Malty, slightly hopped cider)

Brewed this up this past week and it's bubbling away. Used the OP's recipe and Crystal hops. I made a hopped cider last month dry hopping with Citra hops and it turned out awesome. Now that I've already made the graff, think I'll go back and read more than 6 pages of the thread. :)...

How to reliably reuse Yeast Slurry

I'd like to know too. I've read other posts here on the subject (over on the brew side) -- even the ones with photos. I've saved the yeast slurry, but I only see 2 layers instead of 3, so I'm not sure what to use and what to throw away. And on top of that, I'm not sure when/how I'm...

    Homemade press ideas?

I saw this the other day. It may be more work than you had in mind, but seems to be a lot lesser expensive to build than most of the presses I've seen the plans for.

    good cider yeast

I'll have to try the S04.Do you pitch it directly into the must without rehydrating?

Recipe Help -- How To Get Orange Flavor -- Russian or Friendship Tea

Of course it would be simpler ... but not nearly as much fun! Besides, I don't like distilled alcohol and, other than Bailey's at Christmas, never drink it. Id mayyes muh fayth feehl fuhunny. ;) I agree on the spices, but I know that cloves are hard to predict when whole or cracked -- I really...

Simple Hopped Cider -- So Good It's Sick!

Cascade hops have a lower AA value than the Citra hops I used. I'm thinking that the higher the AA% the less you'd want to use per 5 gallon batch -- unless you want a really pronounced, in your face, hops presence. I didn't, so I was afraid to use more than 1/2 ounce in the batch. :) I...

Recipe Help -- How To Get Orange Flavor -- Russian or Friendship Tea

I have a standard go-to hot tea mix I drink in the fall & winter. It's called Russian Tea or in some places Friendship Tea. It's an instant mix that's added to hot water & isn't alcoholic. You can see the original recipe here: http://www.food.com/recipe/russian-friendship-tea-mix-16632 I'd...

    good cider yeast

Not sure about the kit you are using -- blueberry cider sounds good, though. Don't kits usually come with yeast? I like Nottingham for cider.
