Moldy LME - is the steeped grain "wort" salvageable?

Was making a batch of extract beer today and after steeping the grains, I found that the bulk LME i bought has a bunch of mold growing on it. I immediately aborted the batch and brought the steeped grain wort to a boil and closed everything with a lid. The question is: tomorrow when I...

Wanting to turn 2 cans of Cooper's wheat into a hefeweizen

I have 2 cans of Cooper's wheat liquid malt extract sitting around. Can't seem to find any recipes that use just liquid malt to make hefeweizen. I want to turn these two cans into a hefeweizen as soon as possible. Do I use 2 cans for 5 gallons? Do I need to add any dry malt extract? What...

newb making lager...am i doing anything fundamentally wrong?

i will be more careful for sure next time. Now that i think about it, the temperature swings were not that bad. Even though the temperature fluctuated between day and night, the temperature strip indicator on the carboy fluctuated in 40-50F range. Probably wrapping everything in tin foil and 2...

newb making lager...am i doing anything fundamentally wrong?

well i let it sit in the secondary without messing with anything, and checked it today. By now all fermentation looks like its over, and the beer looked rather clear, so i bottled it. The taste wasnt actually too bad, tastes similar to czech pilsners, but more hoppy, perhaps a bit too much...

newb making lager...am i doing anything fundamentally wrong?

ahhh ok. recipe called for 7 days in primary, so i followed it....thats good to know for the future. Right now the fermentation seems to be still goign strong in the secondary. The beer developed a 3 inch "head" and looks like a giant glass of beer with bubbles coming up. Pretty cool. How...

newb making lager...am i doing anything fundamentally wrong?

wel i let it ferment for a week and bubbling slowed down. So i transferred it into secondary today, so no more hops and other gunk in there. However now after 2 hours in secondary its fermenting and bubbling like crazy again. Is that normal? I tried a little and it tasted good, only slightly...

newb making lager...am i doing anything fundamentally wrong?

What are the taste consequences when it comes to yeast that has been stressed a bit?

newb making lager...am i doing anything fundamentally wrong?

So i made a batch of lager pilsner (can of liquid malt, some powdered malt and 2 packets of hops). Now i have a question about fermentation...I put everything in a bucket fermenter with an airlock, wrapped it in tin foil to prevent light from getting in, duct taped the foil so it doesnt get...

weird taste problem on 1st batch

now that i think of it i seem to recall that OG was 1.050 and reading at the end was 1.010. I might be wrong though...

weird taste problem on 1st batch

the batch was actually made back in the spring. Just extract, no grains. I split hops into two parts, put half at start of boil, half with 15 minutes left. It was fermented for 3 weeks and i've regularly tried the end product after bottling. It did get a bit better with time, but still not what...

weird taste problem on 1st batch

well i made a batch of hefeweizen out of wheat extract, white labs yeast and some hops. this was my first attempt at brewing. After bottling it and letting it sit for a while, the result is not very satisfying. The beer looks great, good color, carbonation and head, however taste leaves much to...

First time brewing - some concerns and questions

well so far there was no blowover incidents. The fermentation is going at a very tame and consistent pace. As far as i understand the secondary fermentation is for making beer more clear, which is not the case in hefeweizens. Why do some recipes call for secondary then?

First time brewing - some concerns and questions

well 2 days ago i made my first ever batch (just a simple hefeweizen from extract with white labs hefeweizen yeast). This morning i saw first bubbles in the air lock. Now i am worried about the whole thing exploding. How likely that i will have a mess on my hands when i will come home...
