Did I just set myself up for a flat beer by not adding yeast at bottling?

It somewhat depends on the age of the solera. If you've started it a few months ago, there will likely be no issues. If it is 9+ months old, you might not have much living yeast. That being said, I typically do not add yeast when bottling long term aged sours. I also keep that in mind, and age...

    Sour aging vessels

I suggest using several 6gal Better Bottles or carboys, with different bugs in each, and then blending. If you top up the BB's, you'll have very little/no headspace, and acetobactor shouldn't be able to take hold (I've never had any issues). Spreading your long-term aged sours out into many...

    Clarification time for turbid mash

I did a fake turbid mash (added spelt flour to the boil) for use in a long-term aged sour (using ECY Dirty Dozen). However, I used ~5gal of wort in a couple of 3gal better bottles with Brett Drei and Brett Brux Trois Vrai. I may want to blend the smaller brett batches with some sour beer after...

Long Term Aging of Wild/Sour Beer in Summer??

I have been trying to up the IBU's, which I see you're already trying. My only other suggestion is to have some all-brett carboys. Blends like TYB Amalgamation or ECY Dirty Dozen should give you brett funk/complexity with little acidity. I've started this process here in tropical Aus, and am...

    Gigayeast Sour Cherry Funk GY150

My packet was DOA. Zero activity after 30+ hours. Shipping mixed yeast cultures to tropical Australia is a pretty dicey proposition, but I expected that there should have been something alive in there. I'm hoping my LHBS gives me a refund on this one.

    Gigayeast Sour Cherry Funk GY150

My general experience is that Flanders style beers need 9-18 months anyway, so I've no problem with waiting over 4 months. I also really worry about over-souring at high storage temps. I think the science on it isn't settled, but I'd prefer to err on the less-sour side, then having to blend in a...

    Gigayeast Sour Cherry Funk GY150

I'm in a pretty hot climate.... I'll temp control for primary ferm, but ambient temp for long term aging (around 75-82F). Given the high aging temp, I was going to up the IBU's (around 8-9%), and if it's not sour enough I can blend in some overly sour beer later.

    Gigayeast Sour Cherry Funk GY150

The above post states that you also threw in JP dregs, which are famous for "taking over" mixed fermentations. Any opinions on using GY sour cherry funk in the future? I'm planning to use it this weekend. I do have some JP dregs, but was planning to use this GY blend on it's own in primary...

    Bottle Dregs for first Lambic/Gueuze

I've done this in a 1/2 gal growler. Filled ~1/4 with starter wort, and dumped dregs each time I opened an appropriate bottle. I kept in the fridge, so there was no need for additional sugars over the 3-4 month period I kept it around before using.

Is there a Gigayeast equivalent to Wyeast 3724 WLP565 Dupont Saison strain?

Is there a Gigayeast equivalent to the Wyeast 3724/WLP565 Dupont saison strain? It looks like the Gigayeast Saison #2 might be the same strain, but I cannot tell.

Almost full 5lb CO2 tank. Pickup only. $30. In Washington DC, close to Howard U, Columbia Heights metro. Moving to Australia, and I can't take it with me. CO2 tank only, regulator is not included. I also have an extra propane tank if anyone is interested. Will consider a trade for some good...

    Desert island dregs?

Exactly. I'm really wondering what have been various brewers favorite dregs for home brewing. There are plenty of beers with viable dregs, but depending on the circumstances, not all of them produce good homebrew.

    Desert island dregs?

Yep, Bruery is easy to find in DC. Sour in the Rye might be a good candidate for nice dregs.

    Desert island dregs?

I'm moving to Australia next year, so it'll be difficult for me to buy lots of commercial sour beers. I assume I'll ramp up production of my home brew sours, but it's not possible to get ECY or dregs from lots of the beers I like. So, to my question: if you were stuck on an island and were...

    Imperial Organic Yeast???

I'm a bit hesitant to order this stuff. Some of the strains are likely the same as Wyeast/White labs, while others may be different/new strains. I think this company would do well if they made this info available. If the strains are the same as Wyeast/White Labs, why pay more for double cell...

    Imperial Organic Yeast

A bit frustrating that there is no conversion chart for these yeast so you can tell which Wyeast/White Lab strains are their equivalents. I get it that the yeast comes in cool looking cans and has a higher cell count, but I honestly wouldn't go out of my way to buy these unless they have unique...

    BlackMan Yeast

I have some friends who chatted with the dude from Black Man Yeast at the Blue Bonnet home brew shindig. They said the dude was super cool/nice, and has a reputation for being a stellar home brewer. They also bought a couple of sour packets, which they'll be testing soon. I'm giving them some...
