I found they Zymatic last weekend.... And I'm pretty sure I've been thinking about it for a couple hours out of each days since lol.

    Flavoring Cider

I use 1/2 sticks, or 1/3 sticks. They come right out of my better bottle :)

    Flavoring Cider

Thanks for the replies! I haven't tried any of the yeast recommendations just yet as I scored a deal on some other types and I'm working through them one batch at a time :D I have a question regarding Lyle's golden syrup. I came into 28 gallons of frozen pear cider from this falls harvest and...

    Caramel Apple Hard Cider

I agree, the yeast nutrient makes a huge difference. That baby will be fermenting in no time at all. The smell is still not all that great, but its definitely much better than not using any at all. I use both nutrient and energizer. I let mine finish completely, leaving for a month or longer...

Lyles Golden Syrup - Add Flavor or Not?

What about using Lyles in a cider for backsweetening and suspending prior when racking to kegs using potassium metabisulfite and pottasium sorbate? Do you think any of the flavors from the syrup would offer a sweet toffee flavor to the cider?

    Caramel Apple Hard Cider

I just kegged this recipe last night and had a taste of the still... Very delicious! I went with the recommended cinnamon syrup and 4 cans of apple juice concentrate. I used potassium metabisulfite and potassium sorbate to suspend fermentation when racking and left in secondary for around two...

    Vintners Harvest Cherry Puree

Congrats on another successful experimental brew! Looks great and I'm sure it tastes even better. PS, I love Sailor Jerry's Spiced Rum. I also think it has a hint of cherry flavor in it!

    Caramel Apple Hard Cider

Seems like the syrup flavoring would work, especially for kegging. I've just ordered a wide selection of syrups and concentrates to start playing with more flavoring and sweetening options. There seems to be a lot of options out there for people that prefer kegging over bottling.

    Vintners Harvest Cherry Puree

Problem is that I don't have a LHBS. I score all of my stuff online or when I'm traveling regionally for work. I live in a small midwest town of maybe 15,000 people. We could use one!

    Vintners Harvest Cherry Puree

That's a good point, but I would add the puree to taste using only the amount for my desired flavor/sweetness, then freeze the remainder for another batch. Now that you mention it I might go with half to ferment and half to backsweeten flavor? IDK, its awful pricey to use in primary, 96 oz is...

    Vintners Harvest Cherry Puree

Sweet, thanks for the updates, I will look forward to seeing more. My thoughts are to: Finish primary to dry Rack to secondary Halt fermentation with sorbate/metabisulfite Add pectic acid Add puree for flavor/sweetness Hit it with sterilized wine degasser Cork and airlock Let that...

    Caramel Apple Hard Cider

First 5 gallon batch of cider! I had a quick taste after racking to secondary and mixing and it tasted pretty good, obviously immature and yeasty. Definitely more apple flavor compared to before the concentrate and the cinnamon seemed just right. I went with four cans of concentrate. The only...

    Vintner's Harvest fruit bases

Hello brewers, I'm so glad I found this thread, it seems to be the best one on the site for this Vintner's products. I'd like to backsweeten and keg some ciders with this product. If anyone has any experience using this for ciders please share. Thanks!

    Vintner's Harvest Red Raspberry puree

How did this finish up for you? Found this product today and I must say I'm a bit stoked to use in my ciders in secondary, halt fermentation and keg for flavor and sweetness. Please update if you're still active, thank you!

    Vintners Harvest Cherry Puree

I've been searching high and low for the best products to secondary flavor and backsweeten ciders. I saw these gems in the back of my Midwest Brewing catalog.... The first time I think I've ever read one! Please report, this sounds fantastic!

Looking for Recipe for Sweet, Clear and Sparkling Cider

Never tried one before but this looks interesting. Morebeer Filter I've often skipped secondary with beers which I won't be doing anymore. My addiction has taken off in recent months and I have enough carboys sitting around where there's no excuse anymore lol. For some beers it almost seems...

    Flavoring Cider

Woke nthis one up from the dead! I just started brewing ciders and I am also using store bought juice. So far I've tried Lalvin EC-1118, 71B-1122, Nottingham Champagne yeast and Danstar Premier Cuvee`. Still fermenting some so I can't provide any feedback. What yeasts are you most...

    Harsh hard ciders

Yes, the plastic bottle is simply an indicator as to when to pasteurize the glass bottles before they turn into boozey, sugary shrapnel.

Looking for Recipe for Sweet, Clear and Sparkling Cider

Check out UpstateMike's caramel apple cider in this forum. Its really popular and I have a couple batches going now. Also, its my understanding that in order to suspend fermentation completely its recommended to use K-Sorbate AND K-Metabisulfite in conjunction with each other. Using just one...

    Caramel Apple Hard Cider

This thread has been rockin' a long time! I have a batch of this in primary that's finished. Had a taste yesterday and took a reading, everything appears to be perfect. The syrup smelled delicious, I've been looking forward to this cider since the day I put it in to ferment. I ended up leaving...
