    A question about Brett.

A couple of comments on the floating things. They appeared to me to be just whey proteins. It is not uncommon to take the raw whey from cheesemaking like this and get secondary cheeses from it (almost like a cheese partigyle if you will). Perhaps in the next round, I'll make more ricotta...

    A question about Brett.

Interesting! Thanks jekeane! I'll give that a try instead of the 1118.

    A question about Brett.

This next weekend, I'm making a Cotswold, I will save the whey again and test a batch of fermentation of non-Lactaid vs. Lactaid. What I've done thus far does not show that the Lactaid did the reduction of Lactose if the milk has simple sugars in it already, then I would see no difference in...

    A question about Brett.

OK, so here is my experiment. 1. I made a Caerphilly and saved about a gallon of whey. 2. I measured the gravity of this whey, it was 1.022 3. I took 6 lactaid pills, crushed them in a mortal & pestal, and added them to the whey. 4. After a few hours (at room temperature) I measured the...

    A question about Brett.

Just ran across this thread and by chance, just dosed my sweet whey with some Lactaid (crushed 6 pills for ~1 gallon). Not sure there is any way to tell if the lactose has been broken into glucose + galactose... So, I pitched in a packet of Lalvin 1118 to the mix to see how it goes. Any...

All Pints as good as my last 3 pints

I am the sole drinker on the kegs in my home most of the time so these corny's are hanging around for a while. It may be that in the last few pints, I'm getting to the super clear, all the stuff has dropped out, section of the keg. I usually cold crash for a few days (32F) before kegging, I...

All Pints as good as my last 3 pints

OK, the last few pints of any corny are THE BEST. How can we make all the pints taste like the last one? I've seen some floating keg inlet, I've cold crashed for way beyond hop persistence, etc. Anyone else see this phenomenon?

    Keggerator Freezing Kegs

OK, this is a new (and totally odd) condition. I have a standard keggerator. It is a black box with the chrome top rails that was originally for a full keg. I've switched out the tower and have 3 taps on it, 2 full size Corny's and a halfsy (3 gal) keg I keep on nitro in the back. This has...

    Saggy HERMS Coil

OK, so I'm converting a 10 gallons SS Brewtech kettle into a HERMS HLT and have a question. In this 'weldless' approach, I see that my coil 'sags' a bit in the kettle, deforming the side of the kettle a bit (nothing too extreme but noticeable). Anyone see this? I'm thinking that perhaps I...

    A couple of repitching questions

Thanks for all the advice, I followed Mr malty, and a little more. Took off Luke a rocket and actually blew the top off the brew bucket. Mess inside the fermenting chamber... Chugging along nicely though.

    A couple of repitching questions

Hello, I did a 70-shilling Scottish ale on chico yeast and have racked off all but the last 1.5 inches from the primary a week ago. So the cake has been continuously under beer since then and have been in the garage in the upper 50's this past week. I'm doing a IIPA and going to repitch...

    Pseudo-BrewEasy/Brutus: No sparge test pilsner

Today I was trying out the no-sparge method that is what the Brutus and the BrewEasy. Specifically, I wanted to look at the efficiency my system with a temperature step mash. Here is what I found. My system is usually the 10gal Igloo MLT and HLT and a 10gal BK on gas. Today, I left the HLT...

Any idea on changing efficiency for converting recipes?

    Blichmann BrewEasy

I picked up the 10 gal/ 220v BoilCoil and will be putting in the outlet this weekend. Love to have the controller from blingmann, but it looks like it may be faster to just build a "Toolbox" PID etc.

Roggenbier recipe - too much caramel?

There is a roggen in the latest zymurgy, and it is 8oz of a 12# grain bill. I've never made one myself, but I just initiated a starter and will brew it up this weekend. Seems like a lot in your recipe.

Have 2 5gal pin lock corny kegs want ball

Just get MFL (http://www.homebrewing.org/Keg-Disconnects_c_424.html) fittings and you can run either. This gives u the most flexibility, IMHO.
