Is a 90 Min boil after Double Decoction necessary?

I'm doing an Oktoberfest beer this week and am trying a double decoction mash for the first time. Normally a beer like this would boil for 90 mins to reduce DMS issues. Does the decoction method allow me to do a 60 min boil instead?

    One gallon recipe questions

I just racked my 5 gallon mead into a secondary with Camden tabs and potassium sorbate to stop any further fermantation and am going to leave it there for a couple of days. My OG was around 1.12 and my FG was aroung 0.996. This weekend I plan on racking the mead into 5 seperate 1 gallon jugs...

    Gravity queston

Made a Wildflower Honey Mead 14 days ago with Lalvin 71b-1122 yeast. My OG was 1.12. Checked the SG today and got 0.996. The taste is really good. Sorta like a drier moscato if that makes any sense whatsoever. Anyhow, I plan on backsweetening it a little with fruit and spices after I kill...

Bummed out about Austin Homebrew's practices

I ordered a bunch of stuff to make a beer from AHB earlier this week. Today I received two emails simultaneously. The first stating they have shipped my stuff, and a second saying they were out of stock on one item and will be sending it out at a later date. The problem is the item that was...

Can anyone recommend a good Dunkelweizen kit?

I have a friend who has raved about this style of beer ever since getting back from Germany. I'd like to see if I can make this style and surprise him with a coupole of growlers full. Has anyone made an extract Dunkelweizen with good results?

    First Mead questions

Hello, I'm going to be making my first batch of mead this next weekend. I'm planning on making a 5 gallon batch and after 3 weeks, racking into 5 different, 1 gallon size bottles to age. I was thinking about adding different fruit and/or spices to 3 of the gallons and leaving 2 just straight...

    Kegged my first beer!

Exciting news! (for me at least) I brewed BeercraftUSA's Rock Mountain Amber Ale a little over two weeks ago. The hydrometer read 1.051 on day one and 1.010 on the last two days. I haven't yet checked what that would make the alcohol content be. Anyhow, did my best to move the bucket...

Using acetone and ice to cool wort?

When you mix acetone and ice you can significantly drop the temperature of the liquid below freezing. If it is exclusively acetone and ice it will get down to 10F. I was curious is anyone has tried this or something similar to cool down their wort?

Should I freeze or refrigerate my grains?

I just bought my second extract batch from a local HBS. It's an English Brown Ale (MMMMM Hopefully). Anyhow, I'm not planning to brew it for about 2 weeks (first batch is still in the primary), should I refrigerate or freeze the grains in the meantime? They are loose in a ziplock bag right...

    Brewing Schedule

I've had my first extract batch fermenting for a couple of days now and I'm starting to think about a brewing schedule to: 1) Ensure, I've always got a brew on tap. 2) To improve my techniques 3) Maximize aging time 4) To try more stuff, without having to buy a lot more carboys. My...
