    I just racked my wort (Porter) to fermenter and I realize I have no yeast. Nada. The soonest I can get yeast is tomorrow and it will be 28 hours till I can finally pitch the yeast. Although the fermenter will be kept at ~70f I'm worried my beer will be ruined. What do you guys think?

    Mixing Starsan by the gallon using digtal scale. Does this sound right?

    I don't want to buy or mess with a syringe so I just figured out the proper weight in grams. I measured 1oz on my digiscale three times and they averaged 40g, so 40/5=8grams of Starsan per gal. Thats easy for me to measure when pouring slowly from the container into a gal jug.

    I want to mix Starsan one gallon at a time. The directions say 1oz per 5 gals so if I put my 1 gal jug on the digiscale and add 6 grams of Starsan and then fill to the top with distilled water, will that give me the proper dilution?

    Plastic vs stainless

    I love my Spiedel 7.9l fermenter. Never a blowoff. It is relatively easy to clean with a terry dish towel. I never use the airlocks and think they are completely unecessary. I just keep a loose cap on it.

    Aeration method

    I don't have or use any contraptions to aerate nor do I even shake my fermenter. I just rack vigorously from brewpot to fermenter letting it spash as I drain. I almost always pitch a slurry from a previous batch. Fermentation is always off to a good start by next morning and finished in 4-5 days.

    All my bottles are Sierra Nevada. I got rid of all the rest. I use mainly 12oz and a few SN 24oz. I store my bottles in SN 12 pack boxes.
