    Batch sparge. I did stir but only at the beginning. I read the thread on here about better efficiency with batch sparge and noticed a few things I could have done better. Maybe I'll work on technique first.

    I don't always secondary, but when I do it's 2-3 wks primary and 1-2 wks secondary.

    Since his off flavors are described as wood chips, I'm wondering if it's a result of oxidation, sometimes described to have that stale or wet cardboard taste???
