    Add Chinook to dry hop?

I agree it could really be in your face since you used it for bittering.... 1oz is a lot of chinook. Although, it could turn out to be very multi-layered with the cascade as a fwh. Go for it!

    Pumpkin Recipe Thoughts

I wouldn't use chinook. Chinook is really harsh bittering hop and has a very in your face flavor which would over power any pumpkin flavor. I would use a milder/ cleaner bittering hop like Centennial and let the pumpkin come forward.

    Hefeweizen - Additional Grains

Not sure this is a traditional hefeweizen but it's pretty good: 6lbs wheat 6lbs Munich 1oz Hallertau Wyeast 3068

    Imperial Pumpkin stout advice

Add 1lb or more of rice hulls or expect a stuck sparge!! I did a pumpkin ale this past weekend with 10lbs of roasted and pureed pumpkin mashed in, and it wasn't pretty. The grain bed was like cement, and I had plenty of water in the mash. Wasn't a ton of fun for my first AG brew.
