Belgian Dark Strong Ale Westvleteren 12 Clone - Multiple Award Winner

Just put my latest batch into a keg. I'm going to let it cold condition for a few months then bottle it. This is my 3rd time making it. First time turned out great, 2nd time it fermented down way to low, like 1.005, so it was too boozy, this time my OG came in quite low at 1.073, but it finished...

    Purple Berliner Weisse

I had the same thing happen to two of my Berliners; they turned the same purple color. Both were both a beautiful straw/golden color when I transferred them out of the carboy and the samples tasted great. However after a week, they were purple with the oxidized wet cardboard taste. I kegged...

Belgian Dark Strong Ale Westvleteren 12 Clone - Multiple Award Winner

I'm making this one a yearly brew, it just turns out so good. I just kegged up another batch of this one. This one attenuated a lot further than I wanted; I hit 1.005 for the FG. So it's going to be a lot drier than expected. I pitched on a yeast cake, so I'm guessing that is why it fermented...

    Midwest Grand Cru Extract kit

I've never brewed that one, but I go to Midwest from time to time. I checked out the beer in question, and personally I wouldn't bother with a secondary. With that being said, I rarely ever do a secondary anymore. I'd let it finish primary than go to bottle or keg, whichever you do. Sounds like...

Belgian Dark Strong Ale Westvleteren 12 Clone - Multiple Award Winner

I must have underpitched, I'm coming up on two weeks and I'm almost there with my gravity. It's currently at 1.014, so just a tad bit more to go. Not sure if I should continue with it at 80F or drop it a bit before crashing it.

Belgian Dark Strong Ale Westvleteren 12 Clone - Multiple Award Winner

I actually came across this thread and the other large Westy 12 thread when I was looking for info on making a St. Bernardus abt 12 clone. After checking the threads out I decided to I'd give the Westy 12 clone a try. I haven't had a Westy in years, but I love Belgian Dark Strongs, so I figured...

Washing or Freezing Berliner Weisse Yeast

Wow, an apple juice starter, that's pretty interesting. I wouldn't have thought that I would have to do two separate starters. Thanks for the info ColoHox!

    Beer kit Weizenbeir advice

Sounds like this is a Mr. Beer kit. It should come with instructions on using the booster.

    Cloudy English Pale Ale

It's still to early in the fermentation process for it to clear. And it really depends upon the yeast you used and how flocculant it is.

Washing or Freezing Berliner Weisse Yeast

I've been washing yeast for a while now, but I've got a Berliner Weisse in the primary right now and was wondering if it was even feasible to wash one of these blended type yeasts. I'm thinking about getting into freezing yeasts too, so the same question applies to freezing it as well...

So, my carboy took a bounce.

From what you said everything stayed in place, so you will be fine.
