    cloudy brown clumps

No I didn't see any going in. There is a ring of bubbles but no fermentation yet. I might bring it upstairs into a warmer temp to see if it gets it going.

    cloudy brown clumps

This is an unpasteurized wild fermentation from stayman apples. Does this look normal? Are the brown clumps the start of a vinegar mother?

"Leaving cider on it's lees too long"

I am not at the point in which I can use data and analysis as Jacob Marley suggests so I am taste profiling instead. I have several test ciders going now and I am about to implement two 1 gallon batches in which I will use the same press, the same yeast, and left in the same conditions. I am...

    Orchards near Baltimore MD

    Orchards near Baltimore MD

I stopped by last weekend, what a beautiful place. That's exactly where I want to be in 5 years. I was not able to talk to any of the cider makers as they were deep into a fermentation but maybe next time I go. I bought 7 gallons of juice, it was expensive but so far its the only place i...

    Orchards near Baltimore MD

I have been to Larriland, its a great place. I really like Rock Hill orchards, you can chat with the family that owns the farm, they are good people. I have been to many orchards in the area but none that specialize in cider trees. I will definitely go out to DLC as soon as possible, hopefully...

    Orchards near Baltimore MD

Anyone know orchards that have good cider apples in Maryland? I am trying to figure out what cider varietals grow well here. I am hoping to purchase 2 to 4 year old trees next year for my yard, and eventually buy a small property to start an orchard. So far I have found a cider orchard at...

can cider be made without yeast using whole apples with skin left on?

Has anyone tried fermenting on the skins like you would with wine grapes? I am thinking about mashing my apples, letting them sit in a fermenting bucket and then pressing them after 5 days of primary fermentation on the pomace. Has this worked for anyone? I was looking to update this thread if...
