Cream Ale Cream of Three Crops (Cream Ale)

Well that went a lot faster than expected. Just about 30 mins to 75 degrees in cold water bath only, no ice. It's a 3 gal recipe so all of the ingredients were cut down for that amount with .5 lbs DME added with about 20 minutes left in boil. Hop schedule was .5oz for 60m, and continuously...

Cream Ale Cream of Three Crops (Cream Ale)

Just got done boiling my second batch of this, waiting for it to cool down now. Made a couple of substitutions based on what I had around. Only used half the amount of minute rice(all I had on hand), used all cascade hops(all I had) and bumped up the amount a bit, and added some DME to bump up...

    Sweet Stout Deception Cream Stout

Just finished bottling this. It finished out pretty high..about 1.026, but the sample tasted great, not too sweet at all with plenty of flavor. I did ramp up the lactose so I know that has something to do with it. I tried gently stirring the yeast and warming the primary for about a week, that...

Cream Ale Cream of Three Crops (Cream Ale)

Just finished bottling this. It was my first BIAB and I did a 3 gal batch. OG of 1.041. Not sure what efficiency I got, I was just happy to make my OG. Finished at 1.008 and tastes pretty good. I had seen others talking about the corn taste, and I definitely noticed it too. Kind of a creamed...

Funny things you've overheard about beer

I agree about the beer review sites, some of the descriptions really go wild and sound almost like the little research they did told them that's what it 'should' taste like, therefore they just claim they can pick up on every flavor listed to sound intelligent. However, since I really started...

    Looking for a book

I really liked "The Complete Joy of Homebrewing" by Charlie Papazian. It starts at square one and goes on from there. I'll probably be picking up the book that follows it, "The Homebrewer's Companion", soon.

What's your biggest non brewing hobby?

I like cooking and learning about different cooking methods. Got big into smoking/bbq for a while. Learned a bit about cast iron cooking and use it almost exclusively now. Found an old rusty carbon steel wok at a garage sale for $2. Cleaned it up, seasoned it, and dove into wok cooking for a...

should I tone down a sweet stout sweetness?

Glad to hear It's getting better! I just brewed a sweet stout myself (only my 4th batch) and I used the same amount of lactose. I like the really sweet thick beers, but it's nice to know if it comes out to be too much it should mellow out. Thanks for sharing your experience!

Pappy`s Pub Cider - Award Winner!

Well it's been about 2.5 months since I started this cider. I let it ferment out until the yeast couldn't go any more. Had to add some concentrate to get some apple flavor back, the yeast stripped most of the apple flavor out. I have a gallon of each; blackberry, cranberry, cinnamon, plain apple...

    Sweet Stout Deception Cream Stout

Just got finished brewing this, pretty excited with all the positive comments about it! Because of the fermentor I'm using (4 gal PETE water jug) and the sizes of DME available at my LHBS (1 and 3 lbs), I adjusted the recipe to 3.3 gal. so I could use the whole bags of DME. With that conversion...

    Fastest beer grain to glass?

Thoughts, opinions, and debate are what can make forums like this great. How they are presented is what makes the difference between beneficial and not worth the hassle.

    Fastest beer grain to glass?

Didn't intend on stirring the pot today and I'm not out to make enemies, but this, all of it, is quite insulting. I'm a "noob" with 2 beers and 1 cider down and just brewed my third beer, a smoked porter (extract), last night. I don't know everything and my method is improving, but this is a fun...

Pappy`s Pub Cider - Award Winner!

I just racked mine to secondary after about 1.5 months. Racked to 1 gallon with 2 cinnamon sticks, 1 gallon with mashed frozen blackberries, 1 gallon with mashed cranberries, and 1 gallon I left alone. Tried a sample, forgot to take gravity, but it tasted ok, pretty yeasty and hot alcohol. It'll...

Pappy`s Pub Cider - Award Winner!

Sure thing! Update: on Tuesday night 10/8 I got everything into my carboy (used 4 gal cider, 8lbs sugar, ec-1118 yeast, and the yeast nutrient recommended at my lhbs(it was not the one recommended here but he said It's what he always uses and I've heard he's pretty trustworthy)). Anyway, checked...
