    I am hoping to start a new batch tomorrow. I will have to see how my second attempt at a start goes (made it tonight). If all goes well, I will be brewing my hook & ladder red ale tomorrow! Wish I had a sweet set up to brew outside in the georgous fall weather!

    Carboy Sweating

    I've noticed condensation in my carboys before- more so when the beer dosn't reach the "cone" part of the carboy. It has not affected any of my brews. I don't think I'd worry.

    proper aeration when pitching

    I cool my 2-3 gallons of wort and rack it into the carboy. I then take 3 gallons of cold water (in sanitized 1 gallon bottles) and dump it over the wort until I reach 5.5 gallons. This aerates it pretty well & cools it at the same time.
