If you're wanting to work on it, give me a shout, I'm in a similar boat, but haven't yet found an elegant solution that will still allow updates without rewriting everything.
It's not properly locked down. The javascript files are available, which means that someone can make calls against them. As I said, I can change your temp, or stop the script, amongst other things.
I wouldn't advise advertising your open brewpi url.
Someone with a bit of know-how could (fairly) easily do dastardly things like increase the temperature or turn off the system.

I tried my hand at setting up a VLC stream yesterday.
That worked fine (I could view the stream using VLC on my laptop), but is tricky to get into a webpage, which is my priority.
I did increase the number of photos per minute (just by adding lines like this to my crontab:
"sleep 1;streamer...
1. You'd need a long enough "cable thing" to go from your pi to the inside of your fridge.
2. Apart from that, I don't see why not. Just replace the "streamer" command with:
