    Calibrated hydrometer: check that it reads 1.000 in distilled water at 68F (some hydrometers are 60F). Tap water will do for a ballpark check. Montrachet should have ended around 1.000, or even a bit less. 3 weeks is a bit short. You really dont want to rack this stuff to secondary.

    Filtering beer using a pump vice CO2

    What type of pump - is it a self priming type (like a wine pump)? That might work. If it's a traditional impeller pump I think you will have the issue of CO2 being agitated from the beer and creating a bubble / stopping the pump often.

    I got about an inch of foam at the peak on last batch - used 2# fructose, 5 tsp Fermaid, and 2 packs of Red Star Montrachet. Started to drop clear just about 2 weeks, kegging at 4 weeks. Edit: I might back sweeten with concentrate.

    Pump yer brakes - it is just not done. A week is a bit early to dry hop in any case.

    How do you store Pelleted hops?

    The type of freezer may matter. The frost free freezer compartment of your refrigerator - the thaw/freeze cycles seem to break pellets into powder over time. The traditional deep freeze chest freezers don't appear to do that. If you have the choice, I'd pick the chest freezer for your hops.

    You also may have used an entire pack of yeast for a 1 gal batch, which would be too much.
