    Huge Neon - "Fresh Beer Made Here" Sign

    Its been 3 days fermenting at 65-67...what experience do people have fermenting this yeast a little warm? If it throws fruitiness I'm ok with that but I hope not to get any fusel alcohol flavors. Does anyone have experience with this yeast?

    Fly Sparging Question

    I personally would not boil down 9 gallons to 5.5 for 2 reasons. 1. thats a long boil and I don't like to spend that much time brewing and 2. you'll get a lot of caramelization in your wort. Which could be great if you're brewing a scottish ale or something you want to have both a dark color...

    Why to yeast stop when they do?

    I guess another way to think about my question is why do some yeast strains have better attenuation then others? How can some eat 80% of the sugar and others only 75%? Does it depend on the size of the yeast and what they can fit through their cell wall?
