    I did the same thing, it was really good after just a couple of weeks... but, it really comes into it's own after a few months (much like many beers). Glad you're enjoying it!

    I tried this beer over the weekend in Mt. Juliet... not impressed at all. I feel like it was a fairly poor effort at craft beer. I really hope it was just a bad batch or keg or something because I really like small brewers and startups... agree completely with the green homebrew taste...

    Hey, from a guy very far OTP... I'm up in cartersville but work down in Smyrna/Vinings area. I frequent BWM and am a member of our local brew club (INHBC.org)... lot's of HBTers are in our brew club and you are welcome to join up on the forum, we usually meet up once a month for a meeting...

    I think I just used a pack of notty or S-05. I just added a packet when i racked into the bottling bucket and didnt have any carb issues.

    I just carb in the keg and let it age for a few weeks before serving... works fine for me.

    I would be surprised if they dinged you much for sulfur... it really isn't a defect in a Kolsch and I actually think it can be a nice touch. The mash temp could have got you though, a bit lower and you could have attenuated more and had a more clean/crisp beer. Sorry it didn't do as well...
