    My 2nd All-Grain / Massive Efficiency Increase!

Last Sunday I finally had a chance to do a 2nd all-grain recipe and I was majorly surprised by the leap in efficiency I had! I did Jamil's Beamish-Style Dry Stout recipe from the September issue of Brew magazine and instead of 75% efficiency, which is what I got on my first attempt, I got...

    1st AG - Belgian Blond!

I am so exhausted. All went pretty well. Did a batch sparge and got just shy of 75%. I am so psyched about the color-- I have never been able to get anything this color (pale straw-- about 4.5 SRM) with extract. The only issues I had were pretty much expected. Since I have an electric...

    Question about decoction mashing

All the literature I have read about handling grain, both for steeping and for mashing, advise that you not bring the grain to a boil or else tannins will be extracted which will cause astringency in the beer. Why don't the boil cycles of a decoction mash extract tannins?

    Biscuit or Biscuit flavor?

I had sort of a silly question, but I can't find an answer even after looking at the chart from the wiki. Does the flavor of biscuit malt taste like biscuits from the U.S. or biscuits from the U.K. (what us colonials call cookies...)? Either way, I think I want to try it in a...

    Anyone ever brew with bergamot?

I have the urge for several years now to try to make sort of an Earl Grey IPA by putting bergamot in the brew. Since it is an oil I figured it would be okay in the boil (ooo, I really wasn't trying to rhyme :o ) and might cause problems if added into the secondary. If someone has tried...

Back in the saddle-- wit homebrew!

Today I brewed my first batch of beer in 15 years. I was a n00b then (having only made 5 batches of extract brew and one mead) and I am still a n00b, albeit a very well-read one. I decided to try to recreate a Belgian white that was my 4th batch back in the day. Because of ingredient...

    Hello from Tulsa, OK

Hi everyone! I used to brew 15 years ago but with one thing or another (moves, wedding, kids, new jobs, etc...) I have not made time to get back into it. So far I have only delved into extract recipe beers (and one of the meads from the Papazian book- the last bottle, 13 years old, was imbibed...
