    You're fine. I ferment 3 gal test batches in a 5 gallon carboy. The co2 produced by fermentation will fill the headspace and push any air out of the airlock. Rack as you normally do and everything should be fine.

    I always add the pellets first and rack on top of them. This gets them mixed in with the beer sooner and allows them to "disintegrate." the pellets will form a green layer on top and look a little funky. This is normal.     Carafa 2 is dehusked. It will add color without the roasty bitterness that black patent can. A few ounces goes a long way in color.

    +1 again on wort chiller. That with a fountain pump to circulate ice water(30 bucks from Lowes) and you can cool your wort to any temp you want. It's mandatory here in va in the summer. If you're not doing full boils, the little chiller is fine.

    That's a blow off tube for all intents and purposes. I wouldn't worry about the size of the bubbles. Co2 doesn't care about what makes it it's the same size always. Your fermenting. Sit back and ignore it for a few weeks.

    Major siphon issues....

    Have you tried using a smaller ID hose? My autosiphon will leak air at the point where the hose attaches to the siphon tube if it's too big. Usually not enough to lose a siphon but that might be the problem.

    What did you use in your airlock? I've seen big bubbles and small bubbles depending on my starsan concentration. I never worry about the size. I find if I have to much liquid in my airlock the bubbles will be smaller than if I have the "perfect" amount. Let it ride. Should be fine.

    Thanks you for starting this thread. I'm very excited for the arrival of my penrose kettle. To help anyone that has had trouble finding a lid that fits, Bayou classic has an aluminum lid that is 16.75 inches in diameter which should fit the pot according to the measurements on the brewhemoth...
