    Heather Mead

    Has anyone tried making a heather mead, ie one made with heather honey and/or spiced with heather tops? I was reading about it in a book, and it sounds interesting. If anyone could tell me a bit about the taste or give me some production tips it would be much appreciated ;)

    Sour'd Beer?

    Wheat beers are supposed to be fruity, but if you don't like this, it will mellow somewhat with age. The type of yeast and the temp that it was fermented at will also play a role, but since you're already past that part, I think all you can do is wait ;)

    I did not use a starter

    As I understand it, a smack pack will effectively make a starter for 5 gallons of wort, since it combines the liquid yeast with malt based nutrients and gives the yeast a bit of time to get going before being added. Wht labs, on the other hand, just comes in the tubes, so it might benefit from...
