You know you're a home brewer when?

When you're peeing and you try your best to create a whirlpool with your stream.

The homebrew house of my dreams... is 30 days away!!

Thanks! It's a food grade sprayer I picked up years ago and I'm actually looking to replace it. I couldn't tell you where I got it but the water pressure on it stinks, I need a gun style sprayer. And that's a propane instant water heater which works great.

The homebrew house of my dreams... is 30 days away!!

That is awesome and you'll have a ton fun building it. I've been down that road and turned 1/3 of a barn into a dedicated brewery on my dads property. Only took 5 years for us to complete! It's about 44'x12'

Hydrating (aroma) Hops Pellets (Do You?)

It's nothing new, IIRC Pliney clone recipes call for this technique for the two stage dry hopping. So if Russian River practices it then it has to be a winner. It just seems so messy so I personally have never tried it.

Water Profile for Kolsch? ~30 Sodium too high?

With your SO4 level being fairly low I highly doubt any tasters would be able to call the beer 'salty'. When you get into high SO4 levels you want to watch your Na level as the combination can have a mineralized taste but with a low mineral profile like yours you should be fine. It will be a...

how much time do I realistically need for my starter

Just pitch the entire starter at high krausen 12-18 hours after you pitch the yeast in the starter. You can also pour off some for saving.

Medicinal flavor adding Knudsen black cherry juice concentrate?

FWIW I always get a medicinal tone with beers with cherry. It takes me back to not so fond memories of choking down that awful cherry cough syrup when I was a kid. I've always blamed the cherries so I stay away from any beers with it so I suspect the juice.

    Pale Ale Critique

If you're looking to see what the hops can do I personally would ditch the crystal addition to the grain bill. Make it nice and clean so the hops come out with no malt to get in the way. Other than that your recipe looks solid.

    National Homebrew Competition

It's about time! I had high hopes for my IPA that took gold at the World Cup of Beer but it didn't place. At least my PA took third so I'm stoked to be in the final round.

What got everyone into Homebrewing initially?

I've always had an in depth hobby or two and brewing always intrigued me but I knew I would become obsessed if I did get into it. Then out of nowhere my dad had a genius idea of turning part of his barn into a dedicated brewery so I figured I better learn how to brew. 4 years later we're still...
