Does anyone else absolutely love Unibroue's Don de Dieu?

Also, what is the batch size for this? For a 5 gallon recipe, this would be too low to produce a 9% Don De Dieu. Thanks again.

Does anyone else absolutely love Unibroue's Don de Dieu?

What OG did you hit before adding the honey? Also, what was the AA% of the sazz/IBU estimated from each addition? Do you feel the honey notes stayed in the beer? I have always been suspect of using good honey in beer, as I think it probably just gets lost among the malt. Thanks for the update.

Definitely interested in your recipe if this turns out well. Please don't leave the thread hanging!

    Oak dowel and gas buildup?

Do you have references for this? I have seen data related to silicon airlocks (the ones with flaps on the top that burp I would assume). I have yet to see O2 diffusion data for rubber stoppers, or carboy caps (the rubber ones with 2 ports)

WLP644 Brett Trois Pitch Rate info from White Labs

Interesting information. I think a follow up email to confirm this might be good. My info from them is not all that old.

    Sour Mash: Lacto preferred pH

This is the response I got from Wyeast when I asked about using Pacman for a secondary ferment after an initial pitch of lacto a few days earlier. FWIW, I soured my entire wort with lacto from grain, held the temp at 46*C and after 2 days I was down to 3.5pH. After a boil it was measured at...

WLP644 Brett Trois Pitch Rate info from White Labs

Below is some info I got from White Labs regarding using Brett Trois as a primary fermentation. Sticky this maybe? I posted it in another thread, but it will probably get lost/not seen by many in there. From White Labs __________________________________________________ __ The cell count...

100% Brett IPA - FG still high

Here is the information I have from White Labs about primary fermentation with WLP644. As you can see, you probably didn't under pitch. You also can't really use calculators to estimate Brett growth that were designed to be used with Sacc yeast. Check this info, and in the future, I find...

    Cascadian Darkness

Bottles this yesterday. Can't wait to try one in a few weeks. Smells and tasted great when I bottled it. Final gravity was at 1.014.

    American IPA Lakefront IPA clone-ish

I would be interested in brewing this up, but my local supplier doesn't seem to have both crystal 20 and 40. They have 40, 60, 80, and 120. I know that the 20 is lighter. Do you think this brew would be affected greatly with 1lb of crystal 40 only? I am thinking of doing the extract or...

    Cascadian Darkness

The gravity is at 1.014 after 5 days. Some pretty vigourous yeast it seems... racking to a secondary as I type. Will let it sit there for a week or two before bottling. It smells great! Edit: Drinking the wort I tested for gravity and man, is this good. Should be really nice cooled and...

    Cascadian Darkness

Hey there folks. I brewed this up on Feb 9 and am eagerly awaiting the results! It is bubbling away as I write this. I brewed the extract version. The OG was 1.054 using 7.93lbs of light LME (Munton's). I will keep you informed of the progress if you are interested. This is only my...
