I'm not in a hurry to do this so I'm not really sure why I was trying to do a fast carbonation I'm going to go with what you said what the set it and forget it for 2 weeks and leave it at 10 PSI and then I will turn it up when it's time to serve to what you said around 12 to 13 leaving it set...

Also how many ounces would you use to dry hop a 5 gallon batch. I just checked and I can get Citra Hops leaf. Would you recomend bagging or just adding it without the bag to the secondary?
