    Attempt at Wild yeast capture

Thought I'd try to capture some wild yeast using a dish of gelatinized wort. I've read that you want to capture using wild fruit directly, or at least outside in proximity of the fruit plants. No growing fruit in my garden now, but i do have a strawberry patch going dormant and some tomatoes...

    Keg conditioning-I'm missing something

This weekend I'm trying to tap a 3 gal corny keg of a brew that spent 2 weeks in primary, then was racked to the keg with 6 Tbsp corn sugar simple syrup. It has been in keg for 2 weeks at 72F. The day it was kegged I charged it with a cylinder of co2, bled it, and recharged to evacuate oxygen...

    first attempt at swamp cooling

Attempting the swamp-cooler method to control fermentation temperature, I've logged some temperatures throughout the lag & primary phases, and I'd like to know if they are in the ballpark. Below is a picture of my cooler. I usually brew 2.5-3 gallon batches in a typical 5 gal batch...

One for the time heals all file...

Today I had a bottle of my first ever brew, a munton's highland heavy extract kit. Brewed in January of this year. When I first tried it back then, thought it was sour & yeasty & this & that, and my brewing notebook for this beer is full of sins real & imagined that I vowed to fix in the future...

Next step for improving beer ?

Hi all Have done about 10 extract (dme) pale ales since First starting, and Seen a lot of improvement from brew #1 to now. But, there is still some taste in the beer I can't quite put my finger on, it's kind if a cloying after taste that I assume is the oft-cited extract twang. Have...

    keg pressure after conditioning

Tapping my first keg just now, a 3 gallon corny. :mug::mug: I batch primed it for natural carbonation as I would for bottles, but all conditioning done in the keg for the past two weeks. I am finding that I don't need to charge the keg with CO2 at all, and in fact I'd say that there is a ton...

Yeast cake w lots of hop in it

Recently taken yeast cake from a wy1056 brew. Had a strainer mishap and most of my hop material (pellets) ended up in the fermenter. I expected the yeast & hop to separate more than shown, photo is about 10 days old. Question is: could I repitch as is into my next brew, or do I need to get the...

    Victory v-12 inspired brew

Planning to brew a V-12 inspired brew this weekend...I've stepped up the yeast from a v12 bottle, & have styrian goldings & tettnang hops named by victory website. Website is sketchy about grains, just saying " 2 row malts"... Was planning to use amber dme & some crystal 60. Not really...

    A daily affirmation

Lately have been working various batches of a basic dark dme, crystal 60, and wyeast British ale II. My most recent batch used my first multi step starter made from washed cake of a prior batch of the same. swmbo saw this at a local brew pub (see "Old Ale") and picked some up for me. My...

    Grolsch flip tops--more carb?

Starting to drink a batch that I bottled with a mix of 12 oz. crimp caps ad a few grolsch swing tops. The grolsch bottles seem to really pop on opening, and beer has a lot more head (that's what she said) in the glass. Do the swing tops carb better, perhaps due to a better seal from the rubber...

    Estimating Cell Count

I'm pondering washing the yeast from a batch that I'm bottling tonight. I intend to make a starter with it for my next batch. But my question is: with yeast harvested from a given fermentation, and then run through a starter, how do you know with any kind of accuracy how many cells you are...

    Unexpected taste comparison

New to the forum, first of all thanks to all for the helpful information! My first batch is done with its first week of bottle conditioning now, and I thought for experience I would sneak an early bottle. This is a munton's gold highland heavy no boil kit, made from the kit, by kit...
