Specialty IPA: Black IPA Black Shadow - Cascadian Dark Ale aka Black IPA

No reason at all not to use the 1217. Should make a great beer. I would be really careful with the black patent. Carafa III is a dehusked or somewhat debittered malt, black patent is not... at all. It can impart some harsh astringency and roast characteristics to a beer. Use less of the...

Specialty IPA: Black IPA Black Shadow - Cascadian Dark Ale aka Black IPA

I do not secondary so I dry hop in two different ways. First way is to dry hop in Primary after fermentation is complete, usually somewhere around 7 to 10 days just for my scheduling purposes. Basically as long as it is at terminal gravity and has cleared pretty well. Second is in the keg. I...

    Nashville

Key words here are "used to live" Calhouns, if it is even still open, is not remotely worth going to. I believe it closed a little while back anyway. The area it was in has had a pretty serious downturn. Everything of value moved to Hendersonville. If it has been a while since you have been...

    leather beer growler carrier

Looks like a BDSM rig. I don't dig the style or the price. I prefer my growlers double walled and stainless steel, especially if we are talking about a $100 price tag.

Hop Rocket used as a Filter

This! I have used stainless scrub pads in my hop rocket before my plate chiller with good results.

    Nashville

The Hyatt is slightly more walkable. Most of the bars and restaurants downtown are a little closer to it. Only a few blocks difference however. If you are going to anything in the new City Center/Convention Center the Hyatt is also closer. Again small differences in distance. Closest...

The 2014 NHC First Round - Results/Speculation Thread

Nashville score sheets arrived for me Tuesday. One beer had decent feedback the other had zero feedback just a few check marks on the score sheet and the scores. My ciders had great feedback from a master and a certified judge, they used the standard mead and cider score sheet so plenty of room...

    Can pasteurization make juice unfermentable?

Yes Danstar Nottingham is what I have used in the past without issue. I do not rehydrate my dry yeasts, never had issues in a decade of brewing.

Holy crap give me my stove back!

I built a portable brew rig of simplified design just for the purpose of brewing with friends and club members for special events. I enjoy it a great deal. I have brewed multiple medal winning and gold medal winning beers in the driveways of friends. Just have to plan well and simplify. I do not...

    Types of juice for cider

Apple/Cranberry/Pomegranate (Highly successful with multiple medals) Apple/Tart Cherry (successful enough to do again) Apple/Blueberry (wife's favorite and successful) Apple/Cranberry/Blueberry (wife's second favorite and successful) Apple/Triple Berry (Blue/Black/Raspberry) (one of my personal...

    Can pasteurization make juice unfermentable?

Pasteurization should not inhibit fermentation at all. I have never been able to find unpasteurized fresh pressed cider in my area so I am stuck with store bought ciders and juices. I have used more than a dozen types and never had one take longer than 18 hours to get rolling pretty well. I...

Specialty IPA: Black IPA Black Shadow - Cascadian Dark Ale aka Black IPA

If I use S-05 no just pitch the yeast pack. If I use a liquid than yes I do a starter. Generally my starters for liquid yeast are 1800ml.

Store Brand Cider/Juice PH and SG readings

All PH readings were taken with a freshly calibrated Martini PH meter. All SG readings were taken with freshly calibrated standard refractometer. Since that may not be that readable I will list them individually. Brand / Variety PH Sample 1 SG Sample 1 PH Sample 2...

Store Brand Cider/Juice PH and SG readings

I have been winning quite a few medals in competition the last year and a half and have been getting many questions about my methods/recipes from my local homebrew club members. In an effort to help better explain my methods and success I though I would take some readings of the various...

    Breakfast'ish Stout

I need to see what hops I have in the freezer. Probably 20 to 30 ibu's of nugget our northern brewer. No chocolate additions I think. There should be enough of that character off the grain. For coffee I tend to make a few cups of cold pressed dark roast on my French press and toss it in at...

    Breakfast'ish Stout

I grabbed a few new specialty grains I have not previously used the other day at the LHBS. Mainly the De Bittered Black Malt from Dingemans and Coffee Malt from Franco-Belges. I am thinking about using some of them for something like a Breakfast Stout or slightly amped up oatmeal stout with...

    Cherry Cider

I do not remember all the apple cider types/brands I used. I always blend multiple brands of juice/cider.
