I put a weldless thermowell in mine without any issues, the walls are plenty thick.

Start with a pound of the brown malt, sample it during the mash. If you don't like the taste or color add some more.

I have a false bottom that sits above the drain, I have never had a problem with it floating. add grain and then water.

Have you checked Nor Cal Brewing? They make a adapter to use a standard ball valve.
