    No 3 weeks is not too long, I let my cider go for 2 weeks minimum, up to 4 weeks sometimes. I then rack it into a carboy to clear up more, and mellow out.

    Remember if it starts at 72, it's going to ramp up due to fermentation, and could shoot up to 80 pretty easy.

    I have mentioned to many people to add a T on the inside as well, and put the hose in a big circle. You reduce the change of it getting stuck, have two sides.

    I plan on letting it sit in hot water in my sink, not on the stove under heat. Nice tip though. Cheers.

    Thank you, I plan on making the mead today. I will put it in hot water in my sink that is a little over 100F. Meanwhile heat up about 2 gallons or so of water to dissolve it in.

    I just noticed we have about 80 oz, close to 5lbs of Clover Honey sitting in our pantry. About 1/3 of the bottom is somewhat solid now. Not sure how long it has been in there. Would you still make mead with this, by just putting it in the microwave to make it liquid again? Or do you think...

    12V 0.5A is the best I have at home. I'll have to swing by radio shack to see what they have.

    Just curious on what you guys use for power for this. I noticed it's 12V DC 1.05A rated. I was digging through my old chargers and found a Linksys Route 12V DC 500MA rate. Do you guys think that will work fine for this?

    No I don't think 1 liquid smack pack is quite enough, you will be under pitching a little. Either do a starter, use 2 smack packs, or get a dry pack of US05. You could us Cascade for bittering and Citra/Cascade for the rest up to you.

    Many yeast strains can ferment out that fast. However, give it even more time to clean up the beer even more. I ALWAYS do primary for a minimum of 2 weeks.

    I'm sure he means F. 90C would happen by turning off the heat and leaving it for 15 minutes or so.
