Thank you all for the comments. I will just continue to take readings and I may or may not transfer to my secondary. I will be kegging this brew if that changes anything? I can create a co2 blanket before transferring to the secondary or keg.

American Amber. I read that leaving the brew in a primary can bring out unwanted flavors to the brew sitting with the trub too long?

On the instructions it says you want to move to the secondary just before fermentation ends?

Also I am using one of those plastic buckets for fermenting and I was wondering is it accurate to take gravity readings from the bottom spigot? Going to transfer to a glass carboy for my secondary.

Okay I whipped together a extract kit. The OG was 1.050 and this was 4/20 @ 10:00pm. Checked the next morning and it was very active sitting @ about 70deg. It is now as of 4/22 @ 12:30pm not very active about 4 out of 10 and it is @ 1.020. Is this thing ready for the secondary or what?

I am going to convert a freezer to a keezer and I am going to use a temperature controller but I am confused because I noticed thay some are dual control? Would I need a dual cotrol if it is just for a freezer? It seems like I would just need it to turn off the compressor when it gets cold...

Good question. I'd say about 75. Of course with the blanket being out the outside the thermometer is showing higher than 78.

Hey one more thing. Should I turn off the heating blanket now and just keep it in the dark?

I have just finished fermenting a extract. My first one at that.. It is a munton export stout and it only took about 3 days till the bubbles stopped so I am assuming it is finished fermenting. I have had the primary wrapped in a heating blanket on low. How long before I can keg this and drink...

I drilled holes in the top and it doesn't seem to effect the pressure.

True, it seems that the bath and body works ones are best, they need to be the foaming ones though. I forgot to mention that.
