    Installing a "Vinnie Nail" in a barrel

    I read the Vinnie quote and one part gave me pause, where he said that the flow can actually stop. Creating negative pressure in the barrel relative to the room would encourage more oxygen uptake to balance the pressure. I wonder if that influences his beers significantly.

    FWIW it was one of the last 2 BN session podcasts, the brewer uses 45% chocolate in his stout and they all loved it.

    The session beers take up fermentor space, why would they use that space on a beer they will sell for less? I'm sure many other factors are involved, however the limiting factor is tank space.

    Best Yeasts for 80s-90s Temp?

    Many of the Belgian strains like the higher temps. Above 80 might be pushing it. Wyeast 3724 can go to 95, try that.
