A positive to option 2 is having a breaker close by your brewing area, and not too far of a walk to turn power back on. Also, if you're set on 30a ignore this, but I would consider spending the money now to do 50a to give yourself room for more later.

That has been a PITA for me in the past. Works, but aggravating. For me, I would just let the trub go into the fermenter. It'll all settle out anyways.

It really doesn't matter. You may get clearer beer and possibly more wort into the fermenter if you use a bag (if you're trying to avoid hop sludge in the fermenter), but IMHO it is negligible.

Thanks, it isn't done yet, but I plan on keeping it as clean as possible. I will definitely get out the good camera when all is done and give some detailed shots of the wiring, both to help others and to let those more knowledgeable than myself pick it apart if need-be. Best of luck on your build!
