    Fixing under attenuation by adding sugar post ferment?

    I did this the other week. My 5 gallon saison finished higher than I wanted at 1.013. I added 12oz dissolved corn sugar and gave a gentle stir. This raised it to 1.020. A week later it was down to 1.011, maybe 1.010. So it can work, but be careful you haven't hit your yeast's alcohol tolerance.

    That's an sg of 1.020 after 4 days? Sounds like you're on the right track. I'd leave it alone and check again in a few days. If you have a sealed lid you might need to release the pressure periodically.

    Degassing?

    Do you have notes on your temps? I've heard if you keep the wine up around 75 it should degas much quicker. I plan to try that this summer when my house is warmer.

    Also, multiply sg by 131 to find alcohol. Short answer is a pound of sugar will raise alcohol by 1 pct point in a 6 gallon kit. 1 pound of sugar added to 1 gallon, adds 6.18% alcohol (2.36 cups x 0.020sg x 131). Since you're using 6 gallons, divide by 6 to get 1.03% (6.18% / 6)
