    Local smoked malt, used for whisky, what to brew with it?

    I like stouts, but somehow I feel the black malts and their burnt/acrid acidity would not help me asses the nature of the smoke malt itself and would get lost. Even thought they don't care much about their malting process efficiency, I would still expect some level of uniformity on their malt.

    Bucket water heater hooked to a digital temp. controller to control mash temp?

    Hi, I just bought a water bucket heater, and I already have a digital temperature controller (thermostat - http://www.northernbrewer.com/shop/johnson-controls-a419-digital-temp-controller.html) Has anyone used them in combination to control mash temperature? Is this an overkill?
