this beer is runnin a fever!

I'm brewing a very high gravity, high alcohol brew right now... 1.089 est 10% abv. I pitched two packs of US05 and 8 hours later saw high activity and a nice cake of foam. 24 hours later and this thing is VERY active. Looks like a slushy machine inside... very good activity! Clearly the...

Adding water to make up for trub

I just brewed the one pound Johnny, an imperial ipa with a LOT of hops. I ended up with a ton of trub in the carboy... maybe 3+ inches, so I added the normal amount of water that I usually add... I boil 2.5 gal of water, then I add 3.25 and that usually puts me right at the 5 gallon mark on the...

    Wyeast Roselare... incredible!

I'm brewing the tart of darkness, and I pitched a week ago. It showed activity in about 6 hours, and its STILL going! Huge blowoff, actually left the Carboy, travelled 4 feet, and into the bucket I'm using as an airlock. One week and there is still visible activity and bubbles every half a...

My first attempt at a homemade recipe!

I'm calling this beer "One Pound Johnny", which is a spin-off of a VERY high IBU kit. They're not disclosing their hop bill, so I just sorta winged it and this is what I came up with. It's going to be, obviously, and Imperial IPA. Recipe Type: Extract Yeast: Safale #5 Double Pitch Yeast...

    Will re-yeasting for carbonation HURT?

OK I seem to be getting a LOT of different answers here regarding this. I've been asking "Should I add yeast for carbonation" for a beer that has to ferment for 9 months in primary. Some people are saying "Yes, add a whole packet" others are saying "No, the yeast will live in suspension if the...

    Time-lapsed Brew Video

I had my buddy time-lapse the entire brew process (1 picture every 3.5 seconds) and turn it into a cool video :) This was the "Tart of Darkness" sour stout from MoreBeer! http://www.youtube.com/watch?v=7_bPLryMJlg&feature=youtu.be

    HELP: Tart of Darkness

I ordered the "Tart of Darkness" sour stout kit from MoreBeer.com and I will be brewing it today. I know it requires 6-12 months fermentation (to get the sour part) but it didn't come with specific instructions. It came with their usual instruction sheet, nothing about fermentation. It also...

    Gunpowder's Hop Cannon APA

So here's my first self-made recipe! It's a hoppy American Pale Ale loaded with all kinds of hoppy hops :) IBU's in the mid 60's, ABV around 5.5% so nothing over the top. Check it out and feel free to brew it yourself if you want! Type: Extract Date: 1/4/2013 Batch Size (fermenter): 5.00...

I need a Blue Point "Hoptical Illusion" clone recipe

Blue Point Brewing makes one of my all-time favorite IPA's... the "Hoptical Illusion". I was wondering if anyone here had a clone recipe of it. I'd REALLY like to brew it. There seems to be a lot of debate about the yeast strain and the hops all over the web.

    Moving a Carboy

OK I'm making an IPA and I opted out of secondary fermentation. To be honest, my friends and I rather like a cloudy IPA, so clarity isn't an issue for me. When this is the case, I do primary only for a few weeks. I think this helps the flavor. Anyway, I just dry hopped it today and added my...

Not much krausen on my IPA...

Fermentation is nearly complete on my IPA and everything looked good but i noticed there wasn't much krausen... maybe half an inch of foam. Is this normal? The red ale looks like it has a layer cake on top of it. Nice thick krausen... But the IPA not so much. Should I be concerned...

    white wisps?

I'm on day 2 of fermentation with my red ale, and things look great so far! Nice activity, nice krausen, great colors... but I just noticed these little white wisps. I've never seen that happen before. Strangely, they don't concern me too much. Maybe because everything else looks great...
