    Cognac Brown Ale?

    A couple years ago I made a brown ale (extract) and, after fermentation, I added some white oak chips that had soaked in a spiced rum. Let's just say the keg didn't last long! But I'm thinking of doing this with Cognac this time. Or maybe with a Pilsner? Thought / opinions?

    Thanks you both ! Typically on any extract recipe I brew anymore, I tweak something in it. Be it type and/or amount of hops, malt, etc.. I am seeing you have to plan ahead.

    Mango Habanero Beer?

    Follow up: I made this using 7lb of frozen mango & 3 habaneros. Little bit too much pepper and mango fainter than I wanted. But it makes an outstanding marinade for pulled pork !

    Yeast for Small Batches

    Agree there is no real secondary fermentation. A "secondary resting" is as good a name as any! I'm thinking along lines of IPAs . Maybe making a 5g batch, then split it up into 2 or 3 secondary's and try some different hops, just to experiment. Or, again, a 5g batch split into 2 fermenters...
