    How cold is too cold???

The weather suddenly turned real cold here in Walla walla and I have 3 cases of 22 oz bottles carbing in the basement. Been 7 days now and no carb yet... I guess it went als low as 40 degrees down there... If I bring it upstairs and warm it up will it resume carbonation or did I freeze the...

    My First Mead

Hmmm. I thought Boiling Honeyand fruit was absolutely necessary for Mead. Sounds like a great recipe tho.

Recipe critique?? What do you think?

This turned out to be my best beer yet. Next time I will make it a 6 gallon batch... Very good taste, extremely thick and rich. Tasted great after 7 days in 220z bottles ... better after 14.

    Sweetening up 5 gallons??

Thanks, This is a 4 % lighter beer and wont need to be too sweet. Dissolving it in water seems a good idea.

    Sweetening up 5 gallons??

I have a 5 gallon batch ready to bottle and it tastes great but I'd like to have it just a little sweeter. Should/can I use Lactose and any ideas how much to use? Can I stir it into my bottling bucket?? They say Lactose does not ferment and will stay sweet and not cause bombs?? Or do...

Recipe critique?? What do you think?

OK I steeped the grains (2 lbs total Pilsner & roasted barley) up to 155 degrees in 2 gallons water, turned off the heat and covered and let sit for 40 minutes. (Ended up with about 1 1/2 gallons rich toasty tasting thick brew that tasted real good.) I then boiled my 3 1/2 gallons water and...

Recipe critique?? What do you think?

http://www.sanfranciscobrewcraft.com/articles.asp?id=133 Wondering if I can mash the pilsner and the roast together this way. Then add to my extract mix for another hour.

Recipe critique?? What do you think?

Hmm... Here where my inexperience needs guidance. Im assuming by mini mash you mean to mash & boil the grains then add the extracts later? I thought I could steep the grains for 45 minutes in a 3 gallon boil then add my extracts in a 45 as well. Or better to mash at 155 degrees for an...

Recipe critique?? What do you think?

    Hi Gravity beer experiment

My Frankenbeer had at least a half gallon of trub on the bottom... It tasted so good that I gently strained & bottled it into 22oz bottles and added 1 instead of 2 sugar balls. I only got 7, 22 oz bottles from 2 gallons. I think raisins & oats may be a pretty great addition to beers. Lots of...

    Hi Gravity beer experiment

after 7 days I took a taste... Its good! Sweet raisiny, hoppy, creamy, and a good dose of alcohol. Im happy with it so far. I dont think I want this one carbed up too much, I may bottle without sugar or just half.:rockin:
