Good cider apple varieties for Eastern Pennsylvania

I had a co-worker mention he and his dad are looking at land in Eastern Penn. He's only thinking 6-12 trees, not a full blown orchard. Can anyone give me 3-4 good varieties he could plant for cider? At least one should be a pollinator that much I know, but I am not from that area, so I don't...

    Crunchy/Papery... but no smell?

I have a first year hops plant, cascade. The cones look great, but for some reason they have almost no smell to them. I am getting that crunchy paper feel to them that many people state is the key. Am I just a bit early? Or is this a problem?

Side arms and burrs, why does no one talk about it?

I have been trying to find out some information about when to anticipate the burrs that appear. I have many side arms growing out to a foot or more in length now that it is the end of June. Is this normal? When should I begin to see burrs? Will the burrs come off of these long side arms? I can't...

Ok, I am now a believer

Frozen Apple juice concentrate. Used it for the first time this past week. I have read about people who use it to boost flavor. I have been sceptical up to this point, thinking it would bring a falsely sweet taste. Or a taste that was too 'apply' as opposed to 'cidery'. Having used store...

    Wittenberg Germany beer

I had a friend of mine mention the beer from this town in Germany. He was interested in brewing a clone of the beer, but I had never heard of it before! Has anyone got a clone recipe or a clue as to the grain bill and hops from this brewery? Or just East German breweries in general? Any help...

    Kirkland brand Apple juice

Has anyone ever had problems with this apple juice? Stuck fermentation? Preservatives? The reason I ask is that I am 3 days after pitching yeast and have had no air lock activity. The bottle of juice simply says the ingredients are: apple juice. Obligatory preempttive answers to questions...

    Help! Minimizing off flavors.

Long story short, my fermentation temperature spiked 24 hours after initial fermentation from the low 70's to the low 80's and has been there ever since. (Approx. 3days) To minimize off flavors should I take the beer off of the yeast immediately OR leave it on the yeast for another week or so...

    Varietal juice at wally world

Selling for around 2 $ for 1/2 gal. Nice to see a company trying to cater to folks who know the difference in Apple varietys. No preservatives, so you could add it to your ciders!

    Guinness stout clone

This a brew by request from a co-worker. What makes Guinness, well, Guinness? I've made beer for over 2 years now, but tried for the most part to not "clone" existing brews. (They do a fine job so why duplicate it) My co-worker wants Guinness, not just a stout of my own creation. I know...

    Super Kleer after Isinglass?

I used isinglass, but after more than a week this is the result: Can I use Super Kleer to hurry this along? The carboy in the back had super kleer added at the same time, and look at the difference!

One more Layer for Strawberry wine

Taking suggestions here. I need to add a gallon of Something to my strawberry wine. It just does not come across good yet, so I'm throwing the idea of a straight Strawberry wine out. I have added both glycerin and liquid oak. What juices (in a one gallon form) would go well with the...

    Strawberry wine colored Orange?

My strawberry wine is done (FG .994). However, when I pulled a sample last night, it has gone from a deep pink color to Crush soda orange! This my first one, so I have no comparison. Normal? Oxidized? (Didn't taste that way, but...) Lightstruck? Thoughts?

Spiced Cider, a little piece of Home.

I love Cider, and having asked a lot of fellow cider lovers on the forum for opinions on spices and ammounts, I came up with this recepie for a Spiced Cider. Hope it's as tasty for you as it is for me! From my notes: Cinnamon cider - 12/27/12 2 tsp Bentonite 5 gal cider (1.050 gravity) 1 1/2...
